Brightening Smoothie

Ingredients:

1/2 Fresh lemon squeezed. 

1/2 Cup of pineapple 

1/4 Avocado 

1/4 Cup of strawberries

Handful of spinach 

1 Cup of coconut water or plain water

Top with a sprinkle of chia seeds

Directions:

  • Place everything into a blender, mix, and enjoy!

Radiance Smoothie

Ingredients:

1 Medium Frozen Banana

1 Cup Blueberries (fresh or frozen)

1 Cup Raspberries (fresh or frozen)

½ Cup Spinach

1 ½ Cup Unsweetened Almond Milk

  • Place everything into a blender, mix, and enjoy!

Goodness Salad 

Ingredients:

1 Cup kale (chopped)

 

1/2 Avocado (sliced)

 

1/4 Cup slightly roasted chickpeas

 

1/4 cup Pomegranate Seeds

 

Sprinkle of sesame or chia seeds

1 tbsp Olive oil

 

1tsp balsamic vinegar

 

1/2 cup sprouts (optional)

 

Small handful slithered almonds

 

Directions:

  • . Add chopped kale and sprouts into a bowl and toss together.
  •  Add chickpeas, almonds, chia or sesame seeds and pomegranate seeds on top of kale and sprouts mix.
  •  Mix olive oil and balsamic vinegar and add to salad gradually.
  • Transfer into a smaller bowl and enjoy!

Baked Salmon and Papaya Salmon

Ingredients:

1 fillet of salmon

1 lemon

2 tablespoons soy sauce

1 cup grated green papaya

¼ cup chopped cherry tomatoes

5 leaves mint chopped

5 leaves coriander chopped

1 red chili

Salt and pepper

 

Directions: 

  1. Place a fillet of salmon onto a sheet of alfoil skin down.
  2. Mix ½ of the chopped red chili with 1 tablespoon of soy sauce and pour over the salmon fillet.
  3. Thinly slice half of the lemon and place slices across the top of the salmon fillet slightly overlapping.
  4. Gently wrap the fillet with alfoil and ensure all edges are closed so the salmon can steam making sure the foil does not touch the side and top of the fillet.
  5. Place onto a baking tray and into the oven for 15-20 minutes on 160 degrees Celsius.
  6. Whilst the salmon is baking, place the remaining soy sauce, chopped chili, and squeeze half the lemon into a small bowl and mix.
  7. Place papaya, mint, coriander and cherry tomatoes into a bowl and toss together.
  8. Mix in soy, lemon, and chili dressing to taste-making sure not to add too much (there may be left overdressing).
  9. Remove salmon from oven and transfer to a plate, add the salad and sprinkle with salt and pepper to taste.
  10. Enjoy!
